Judith Marquez has managed environmental protection programs with the California EPA and within several Southern CA cities to protect against sewer overflows related to FOG. She received her Master of Applied Science in Environmental Management and Policy in 2012. She now consults directly with commercial kitchens of all sizes as an Environmental Analyst to improve FOG management and provide more efficient recovery of it for diversion to renewable energy. She has a proof-of-concept underway with academia and is collaborating with utilities and other industries to promote restaurants as generators of a renewable energy feedstock.
